Off the Shelf: What is Mexicorn?

Walking through a small, Mexican market on a recent Saturday afternoon, I happened to come across a slightly odd can of “Mexicorn” from Green Giant.  I immediately thought two things:

  • I like Mexico…
  • I like Corn…

Therefore I must like Mexicorn!  Just look, Whole Kernel Corn, Red & Green Bell Peppers, Vacuum Packed!  Well as you could imagine, this was just some canned corn with a really low proportion of diced peppers thrown in…

Obviously, I was unsatisfied with my $1.99 purchase.  But rather than seek out some kind of lawsuit for false-advertising that I’d probably lose, I went ahead and spiced things up with my own “Mexicorn” Recipe (Modified from talks with friend, photographer and fellow chef – Eric Hazard):

Corn Salsa:

  • 2 Cans of kernel corn/”Mexicorn” or the shaved kernels of 4 heads of corn
  • 1 Red Onion Chopped Fine
  • 1 Red Bell Pepper Chopped Fine
  • 1 Diced Garlic Clove
  • The Juice of 1 Lime
  • 1 Pinch of Cumin
  • 1 Pinch of Salt
  • Ground Black Pepper to Taste
  • 1 Chopped Handful of Cilantro

Preparation is easy enough.  After chopping all of your ingredients, mix them in a bowl and add the lime juice.  You have yourself a simple but flavorful salsa, but better yet, you can roast/blacken the corn in a frying pan with 1 Tblsp. of butter and serve as a topping like I’ve done in my recipe for Adobo-Lime Chicken Fajitas!
