Esposito’s Pork Shop is now serving a limited (so they say) run of chorizo sausage and I am happy to provide my endorsement. A little sweeter/softer than the usually more intense levels of heat I’m used to in chorizo, the subtle Italian influence on Esposito’s blend packs a nice balance of flavor and heat.
Though I was looking to use this sausage in a more traditional Portuguese recipe, I couldn’t hold out any longer on a Sunday afternoon and went ahead with an idea for a simple sandwich. Here’s what you’ll need to recreate:
- Two slices of toast
- 2 chorizo sausages sliced in half and cooked over medium high heat until blistering (about 7 minutes)
- 1/4 cup of thinly sliced red onion, sauteed with a light drizzle of olive oil (only 2-3 minutes with the sausage)
- 2 tablespoons of bleu cheese, blended with 1 tablespoon of cream cheese and a splash of lemon juice – spread onto toast
- 3 sprigs of fresh thyme
Slice and serve and you’ll have a quick and easy sandwich with that manages to balance some serious flavors together:
